Chicken Rollups

Ingredients:
4 boiled boneless chicken breasts – chopped finely
4 8oz cream cheese packages
1 jar sour cream
1 jar salsa - medium
1/3 cup chopped fresh cilantro
½ cup chopped onion
1/3 cup sun dried tomatoes(chopped)
20-30 flour tortillas
Cooking spray or olive oil
Cling wrap


Instructions:
Boil chicken until thoroughly cooked.  Leave cream cheese to soften to room temperature while chicken is boiling.  Chop all vegetables set aside.  When chicken is done, set it out to cool then chop finely.  Mix all ingredients in bowl one at a time.

Each roll consists of 2 tortillas and mixture.  Set one tortilla flat and spread 2 tablespoonfuls of mixture evenly, then place another tortilla flat on top and spread another layer of mixture as well.  Pick up one end and roll together into a burrito like shape.  Wrap in cling wrap and place in fridge for at least 2 hrs.  It works better if you leave them set overnight. 

Bake:
Set oven at 350 degrees.  Unwrap each roll and cut up in slices, about 1” apart.  Place on cooking sheet and spray cooking oil or olive oil on top of roll-ups. Cook for about 25-35 min. until golden brown.  Best when served warm with a side of salsa.
