Monkey Food
(From the kitchen of Connie Scott)
Ingredients:
4 large banannas cut in bite size
1 can chunk Pineapple
1-2 cans of Mandarin Oranges
1 cup of Sugar
1-2 Heaping Tablespoons Flour
1 Egg
Instructions:
Note: On using the flour, if you use too little the mixture will not thicken. If you use too much the mixture will taste floury.
1. Drain the liquid from the Mandarin Oranges and the Pineapple into a saucepan, place the drained Mandarin Oranges and Pineapple into a large bowl. In the large bowl also add the 4 large banannas (cut into bite size), set the bowl aside.
2. In the saucepan add 1 or 2 heaping tablespoons of flour to thicken.
3. Take one egg, beat well, then pour into the saucepan, stir well.
4. Add one cup of sugar to the mixture in the saucepan. Stir over Medium Heat (Don't let mixture stick to the bottom of the pan). Keep stirring until thick.
5. After mixture has thickened, remove from burner and stir now-and-then to help cool.
6. After a half hour, pour over the fruit in the bowl. Cover and Refrigerate. Serve Chilled.
Will keep for several days in the refrigerator.
